At the farmers market on the Green last Thursday, my neighbor spotted gorgeous beets and she commented to me that she had just made this wonderful salad with beets, avocados, and red onions with a lemon vinaigrette dressing. It sounded so good that I purchased beets. Last night I made the dish and can only tell you --- you have to try it. Even my husband, who is not crazy about beets, loved it. Cook the beets any way that suits you (I boiled mine in a little water for 40 minutes), slip the skins off and slice them.
Add sliced avocado and a small amount of chopped red onion. 1/4 cup olive oil, juice of one lemon and a little sale and pepper make the dressing.
